When I think about the rich flavors of Italy and France, there’s one dish that instantly comes to mind—a tart that combines all the best elements of these iconic cuisines: buttery pastry, sweet caramelized onions, fresh tomatoes, and creamy Gruyère cheese. This Tomato Onion Gruyère Tart is so delicious, it’s guaranteed to make you smile with every bite!

Ingredients:

For the Pastry:

  • 1 & 3/4 cups flour
  • 1 tsp salt
  • 2 tsp thyme
  • 6 tbsp cubed butter (or 6 oz)
  • 1 egg yolk
  • 2 tbsp ice water

For the Filling:

Instructions:

  • 1 medium Vidalia onion
  • 2 tbsp butter
  • 1/2 tsp olive oil
  • Dash of black pepper
  • 1 tbsp balsamic glaze
  • 8 large tomatoes
  • 2 tbsp pesto
  • 2 garlic cloves (minced)
  • 1/4 tsp salt
  • 2-3 large tbsp Dijon mustard
  • 3/4 cup Gruyère cheese (grated)
  • 1/4 cup Parmesan cheese (grated)
  1. Prepare the Onion Filling: Thinly slice the Vidalia onion. Heat the butter and olive oil in a pan over medium heat, then add the onions. Sauté them for 10-12 minutes until soft and caramelized. Add a dash of black pepper and balsamic glaze, stirring to coat. Remove from heat and set aside.
  2. Make the Pastry: In a food processor, combine the flour, salt, and thyme. Add the cubed butter and pulse until the mixture resembles coarse crumbs. In a small bowl, whisk together the egg yolk and ice water, then add this to the mixture. Pulse until the dough begins to form. Turn it out onto a floured surface, knead it a few times, then wrap it in plastic wrap and chill for at least 30 minutes.
  3. Prepare the Tomatoes: Slice the tomatoes and place them in a bowl. Coat them with the pesto and minced garlic, then sprinkle with 1/4 tsp salt. Allow the tomatoes to sit for 30 minutes to release their juices and intensify the flavors.

  1. Assemble the Tart: Preheat your oven to 425°F (220°C). Roll out the chilled pastry dough on a lightly floured surface to fit a tart pan. Press it into the pan and trim any excess dough. Spread a thin layer of Dijon mustard over the base of the pastry. Then, layer the caramelized onions, followed by the pesto-coated tomatoes.
  2. Top with Cheese: Sprinkle the Gruyère and Parmesan cheeses evenly over the tomatoes.
  3. Bake: Place the tart in the oven and bake for 30-35 minutes, or until the edges of the pastry are golden brown and the cheese is melted and bubbly.
  4. Finishing Touch: Remove the tart from the oven and top with fresh basil for a fragrant, flavorful garnish.
  5. Serve & Enjoy: Slice, serve, and indulge in this gorgeous tart! It’s perfect as a main dish, side, or even as an appetizer.
