This hearty, savory pie is filled with spinach, feta, fresh dill, and wrapped in layers of crispy phyllo pastry. Recipe:
Ingredients:
- 1 package Greek Phyllo Pastry
- 10 spring onions
- 10-12 cups spinach
- 2 ½ cups Greek feta (or more, because why not?)
- 1 cup fresh dill
- ½ tsp black pepper
- ½ cup olive oil (plus extra for layering)
- 2 eggs
- 1 tbsp lemon juice
- 12-inch springform pan
- Did I mention more olive oil? You’ll need it!



Instructions:
- Prep Your Ingredients: Preheat your oven to 375°F (190°C).
- Cook the Spinach:
- In a blender, blend the spring onions until they form a pulp-like consistency. Sauté the onions in a little olive oil until softened.
- Add the spinach to the onions and sauté for 15-20 minutes, stirring frequently until the spinach is fully cooked, wilted, and all the water has evaporated. This is key to making sure your pie isn’t too soggy!
- Once the spinach is cooked, stir in the fresh dill and set the mixture aside to cool.
- Prepare the Filling:
- In a blender, combine 2 eggs and half of the feta. Blend until smooth.
- Cube the remaining feta and set it aside.
- Once the spinach mixture has cooled, combine it with the egg mixture and cubed feta. Stir well to combine.

- Pour the spinach and feta mixture into the center of the layered phyllo. Spread it out evenly.
- Now, fold over the edges of the phyllo one layer at a time, brushing each layer with more olive oil as you go.
- Make sure you finish with one final layer of olive oil on top.



5. Bake:
- Place the springform pan in the oven and bake for 35 minutes at 375°F, or until the top is golden brown and the pastry is crispy.
