Tacos de Papa

Tortillas: The Heart of the Taco


Ingredients

  • 3 cups flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/4 cup corn oil (or oil of choice)
  • 1 cup plus 1 tbsp hot water
  • Instructions:

In a large mixing bowl, combine the flour, baking powder, and salt.
Add the corn oil and hot water, and mix until the dough begins to come together.
Knead the dough for about 10 minutes until it’s smooth and elastic.


Divide the dough into 14 equal-sized balls and place them in a bowl. Cover with a damp paper towel and let them rest for 20 minutes.


Resting is key to achieving soft and pliable tortillas!

Ingredients for the Filling

  • 4 large white boiled potatoes
  • 1 cup queso fresco
  • 1/4 cup sour cream
  • 2 tsp olive oil

The Filling: Creamy, Flavorful Potato

Mash the boiled potatoes until smooth.
Add the olive oil and crumbled queso fresco to the mashed potatoes, then mix everything together until well combined.

Instructions:
Assembling the Tacos


Now that all the components are ready, it’s time to assemble your tacos.

Take a tortilla and add a generous amount of the mashed potato filling in the center.

Roll up the tortilla, folding in the edges to create a little pocket of potato goodness.

Place the rolled tacos on a baking sheet, and brush them with a little oil to help them crisp up.

Bake at 400°F (200°C) for 15 minutes on each side, or until golden and crispy.

Salsa


A good salsa can make or break a taco, so we’re going for a fresh, zesty blend to complement the richness of the potato filling.

Ingredients for the Salsa:

  • 3 Roma tomatoes
  • 1 jalapeño
  • 4 cloves of garlic
  • 1/4 of a large onion
  • 1 cup cilantro
  • 1 tsp salt
  • Black pepper to taste
  • 1 tsp lime juice.

Combine the tomatoes, jalapeño, garlic, onion, cilantro, salt, black pepper, and lime juice in a blender or food processor. But not too much, you want it chunky!
